Cracked Pepper Shrimp

Capt Randy’s Cracked Pepper Shrimp

 

Ingredients


30 jumbo head on shrimp
3 sticks butter cut in 3/8 slices
Ground Pepper
Pinch Sea Salt

Prep


Place shrimp on steak broiler platter cover with butter slices. Cover butter with cracked pepper and pinch sea salt. Broils 4 minutes each side. Serve with toasted French Bread.

Shrimp Gravy

Capt Randy’s Shrimp Gravy


Serves 4

Ingredients


1 ½ cups small, peeled raw shrimp
2 tbs. chopped onion
2 tsp. chopped green pepper
4 slices bacon (diced)
Salt & Pepper to taste
1 tsp. Worcestershire Sauce
1 tbs tomato catsup
1 ½ tablespoons flour
1 cup water or more

Prep


Fry bacon, onion and green pepper till bacon and onion are caramelized, add shrimp; turn these several times with the onion and bell pepper. Add enough water to make a paste – about 1 cup. Do not cover shrimp with water or your sauce will be tasteless. Simmer 2 or 3 minutes and thicken with flour and a little water made into a paste. Add seasoning, Worcestershire Sauce and catsup. Cook slowly till sauce thickens. Serve with grits or rice.

Judge’s Fried Shrimp

 

Ingredients


2 lbs peeled and deveined shrimp
2 cups Aunt Jemima pancake batter complete
2 cups flour
Cajun Seasoning to taste
Vegetable oil
1 egg
½ cup milk

Prep


Mix pancake batter, flour and seasoning. Beat egg and milk and pour over shrimp. Put shrimp in batter, shake off excess batter and fry in hot oil.

Judge Shrimp & Crab Dip

 

Ingredients


1 tub claw crab meat
½ can calm chowder
1 8oz cream cheese (softened)
10 small shrimp diced and sauted
1 can diced clams drained
Cajun Seasoning to taste

Prep


Mix ingredients together then mash with a potato masher. Keep chilled
